Hi Hillmers family. This will be our official last week under the name Hillmers. Our new name "Elmer's Cabin" will start June 7th. I won't be converting this page due to advisory issues so I will be creating the new page end of this week. The name is changing to match our new motto of completely from scratch (including icecream, applause, sauces and everything else able), now locally sourced with every product able to come from within VT & no preservatives! Have a great summer and I absolutely appreciate all the support and care the last 3 adventurous years. We will be selling some of the 50s memorabilia throughout the week to help us clear the walls for our renovations. Love you all! Thank you

Homemade nut free pesto aioli spread on our fresh grilled flatbread panini with shredded lettuce, bacon and tomato

Happy Spring Vermonters! Our class this week will be a little different than usual. Instead of cooking at the restaurant I want to bring students to black river in Newport to teach all about foraging fiddleheads Saturday, May 6th at 3 P.M. Too many patches were over picked last year leading to a devastating loss of patches that I personally have used for 8 years. I will teach which ones are edible, which one are not, the best way to remove them from the plant as not to hurt it, how much to remove from each head to ensure many years of foraging and how to clean, prep and cook them. Send me a private message if your interested in more details. This class will be free as I find it very important to keep our foraging safe for many years to come. Thank you all!

Chef foraged fiddleheads are in! Seared local bacon, caramelized onion from a local farm in Derby tossed with fiddleheads, foraged by Chef Elmer and his right hand man Eric Wolcott Jr, deglazed with Vermont ale and Cabot butter, finally finished with Cabot cheddar cheese! This dish screems Vermont to go with our new goal of 100% locally sourced ingredients.
On a side note I have never been so sad foraging in the Vermont forest and beautiful river beds but this year brought a tear to my eye, so many patches that I've foraged for 8 years were over picked last season resulting in more dead fiddlehead patches than I've ever seen. Instead of making a big fuss about this I am going to hold a foraging class on fiddleheads (how, where, why, which ones are edible and which ones to avoid) instead of a cooking class this Saturday. I will be posting the class with details very soon so keep an eye peeled :) Thank you all for your love and support!

Beer braised short ribs from Brault's market in Troy, over red bliss mashed potatoes and gravy topped with fresh fried onion straws. Served with grilled zucchini & summer squash

Fresh sliced prime rib seared with onions & peppers on our fresh grilled flatbread finished with horseradish aioli, shredded lettuce and house pickled red onions

Fried shrimp and chips
Hand breaded jumbo shrimp served with your favorite potato (homemade BBQ chips, fries, mashed potato, hashbrowns, homefries, wedges or steak fries) And salad or coleslaw!

Hi Hillmers family! This Saturday February 11th we celebrate our 3 year anniversary!!! The kitchen will close for normal menu at 10 AM where chef/owner Travis will be cooking ribs, burgers, lobster rolls, wings and vegan fritters till 2 PM on the sidewalk with the dining room still open to mingle and celebrate. We will be holding a raffle and will be talking about our new 100 percent locally purchased, completely from scratch (no cans, freezers, preservatives or pre-made products) and healthy new menu options for all! Come join the fun. Our children's chocolate class will start at 3:30 that afternoon, $25 for homemade chocolate milk, chocolate dipping pretzels, strawberries and bananas as well as making their own chocolate candies. Only 15 seats for this class so reserve your little hillmers spot soon. Thank you all for getting us this far through everything we have been through! Love you all!

Happy snow day hillmers family! Our cooking class this Saturday will be our Bavarian Pretzel class! Everyone will be making their own pretzels and than Chef Elmer will show everyone how to make an ale cheese sauce and a classic cheese sauce! Only 16 spots available so make your reservations soon! This class will be $25 per person

Merry Christmas Hillmers family. Were not doing our chinese buffet today due to weather. Instead we are offering a pu pu platter including pork fried rice, beef and broccoli, egg rolls, veg lo-mein, sweet and sour chicken and sweet and sour sauce all made fresh! $20 for 1 and $10 per person after this. Only serving till 2 pm today on Christmas eve! We will be closed Christmas day. Thank you all!

Happy holidays Hillmers family! Our homemade eggnog class comes tomorrow, Dec 10th from 3 to 5. This class is 30 minutes long so the first batch will start at 3 pm and the next at 330 and so on till 4:30. The class is 20$ where you will go home with the knowledge of making this new. Safe style of eggnog as well as a big pitcher of fresh eggnog to enjoy your own way! No reservations required
