First and foremost, thank you for your continued support of HJ Wings & Things West Newnan. We truly appreciate every customer who walks through our doors and the trust you place in us to serve your family.
We understand the concerns that come with receiving a 77 (C) on our recent Georgia Department of Public Health inspection, and we want to assure you that we take every point on this report very seriously. While none of the violations involved evidence of foodborne illness or contaminated food, we recognize that every point matters. We believe in being transparent with our community, and we'd like to explain each violation, the associated code, the point value, and the corrective actions we've already taken.
Code 511-6-1-.03(3)(a) – Certified Food Safety Manager Certificate
Points Deducted: 4
During the inspection, our Certified Food Safety Manager certificate was not posted as required. This was strictly a documentation issue—not the absence of a certified food safety manager.
Corrective Action: The certificate will be posted in the required location, and we have implemented procedures to ensure all required documentation remains properly displayed at all times.
Code 511-6-1-.04(6)(h) – Proper Date Marking and Disposition
Points Deducted: 4
Several ready-to-eat refrigerated food items were found to have exceeded the allowable holding period. This was a serious oversight, and we immediately discarded the affected products. We have used this as a training opportunity with our kitchen staff to reinforce proper date marking, daily product rotation, and strict adherence to our food safety procedures.
Corrective Action: All affected food was discarded immediately, and our entire kitchen team has been retrained on proper date labeling, rotation, and daily verification procedures.
Code 511-6-1-.05(7)(a) – Cleanliness of Non-Food Contact Surfaces
Points Deducted: 1
The inspector noted grease buildup on the wire rack that holds our wing sauce bowls next to one of our fryers. Because of its proximity to the fryer, grease accumulation naturally occurs over time. This rack is not a food-contact surface and does not come into contact with any food products.
Corrective Action: The rack has been cleaned and added to an enhanced cleaning schedule to ensure grease buildup is removed routinely.
Code 511-6-1-.04(6)(e) – Cooling Procedures
Points Deducted: 3
Freshly cooked chicken wings had just been removed from the fryer and were temporarily cooling on the countertop. At the time of inspection, our time board had not yet been updated because the wings had literally just come out of the fryer.
Corrective Action: We have reinforced with our kitchen staff that time tracking and documentation must be updated immediately when food begins the cooling process to eliminate any possibility of confusion during future inspections.
Code 511-6-1-.04(6)(i) – Time as a Public Health Control
Points Deducted: 9
The pans containing our onion rings and house fries were still labeled with the previous day's date (8/2) when the inspector arrived on 8/3. These items had not yet been discarded at the time of the inspection.
Corrective Action: The products were discarded immediately, and we used this as another training opportunity to reinforce proper labeling, monitoring, and timely disposal of all time-controlled food items to ensure they are always used on the correct day.
At HJ Wings & Things West Newnan, food safety is not something we take lightly. We appreciate the inspection process because it helps us identify opportunities to improve, and we are committed to learning from every one of them.
We have already completed the necessary corrective actions, conducted additional training with our kitchen staff, and strengthened our internal procedures to ensure these issues do not happen again.
