I did it! let me just say the chicken fell straight off the bone.
Tip: let that chicken boil in that season water for atleast 1.5 hours before adding rice

Let your empanadas chill in the refrigerator for at least 10 minutes. While they are chilling, begin heating your oil. Keep the heat at a comfortable, medium level—you don’t want it too high, as this can burn the oil.
Allow the oil to heat gently. To test if it’s ready, place the tip of a toothpick into the oil. If it begins to bubble, the oil is ready for frying.
Have a baking sheet lined with paper towels prepared ahead of time. Once fried, place the empanadas on the paper towels to drain properly and cool.
