“Bourride holds a very special place in my heart.

In one of my first professional kitchens, I cleaned more than ten monkfish every day. My chef was relentless, reminding me that for a great bourride, every detail matters: the perfectly prepared monkfish, the delicate confit potatoes, and the beautifully braised fennel.

One day, I finally asked to taste it. The moment I did, everything made sense. I understood the passion behind the dish, and it became one of the biggest influences on my journey to becoming a chef.
