Red Rice and Quinoa Salad with Orange and Pistachios

In this fluffy salad, Yotam Ottolenghi blends South American quinoa with nutty Camargue red rice from southern France. The salad gets a fruity sweetness from orange/grapefruit juice and zest and is delicious.

Quinoa Recipes Vegan Main Dishes
1 1/2 teaspoons finely grated orange zest
1 cup quinoa
1 cup Camargue red rice (see Note)
1/4 cup extra-virgin olive oil or Sesame Seed oil
1 medium onion, thinly sliced, or Ginger
Salt and freshly ground pepper
1/3 cup fresh orange juice
1 tablespoon fresh lemon juice
1 garlic clove, minced
1/2 cup dried apricots, cut into 1/3-inch dice
1/2 cup roasted pistachios, chopped
4 scallions, thinly sliced
2 cups baby arugula leaves
Save on 100% Vegetable Juice.

Bring 2 medium saucepans of salted water to a boil. Add the quinoa to 1 saucepan and the red rice to the other. Cover and simmer over moderate heat until tender, about 12 minutes for the quinoa and 35 minutes for the rice. Drain the grains and spread them out on baking sheets to cool.
In a medium skillet, heat 1 tablespoon of the olive oil. Add the onion, season with salt and pepper. Cover and cook over moderate heat, stirring occasionally, until golden brown, about 10 minutes. Let cool.
In a large bowl, combine the orange juice, orange zest, lemon juice, garlic and the remaining 3 tablespoons of olive oil; season with salt and pepper. Add the quinoa, rice, onion, apricots, pistachios and scallions and toss well. Serve with the arugula.
MAKE AHEAD
The cooked quinoa and rice and the dressing can be refrigerated separately overnight. Bring to room temperature before proceeding with the recipe.
NOTES
Camargue red rice is available at specialty food and health food stores. Brown rice makes an excellent substitute.

The World Health Organization says that if the avian flu virus mutates, it could be caught simply by eating undercooked chicken flesh or eggs, eating food prepared on the same cutting board as infected meat or eggs, or even touching eggshells contaminated with the disease. Other problems with factory farming -- from foot-and-mouth to SARS -- can be avoided with a general shift to a vegetarian diet.

A gluten-free claim means the food contains less than 20 parts per million of gluten, the protein found in grains such as wheat, barley and rye, an FDA spokeswoman said, adding that this is consistent with the threshold followed by other countries and international bodies that set food safety standards.

The rule is welcomed by people with celiac disease, a potentially life-threatening illness caused by damage to the intestinal lining after eating gluten.

The three million Americans diagnosed with celiac disease are at risk of nutritional deficiencies, infertility and intestinal cancer if they don’t follow a strict gluten-free diet, said Dr. Gina Sam, director of the Mount Sinai Hospital gastrointestinal motility center in New York City.

Ingredients:

1 Tbsp. oil
1 onion, chopped
1 green bell pepper, chopped
1/2 cup chopped celery
3 garlic cloves, minced
2 cups water
14 oz. can diced tomatoes, undrained
8 oz. can tomato sauce
1/2 tsp. dried Italian seasoning
1/4 tsp. crushed red pepper flakes
1/8 tsp. fennel seeds, crushed
1 cup uncooked long grain rice
15 oz. can butter beans, rinsed and drained
15 oz. can red beans, rinsed and drained

The fat and protein content of cow's milk is very different from human milk - vegans say that we are not designed for consuming cow's milk.

The service offerings are quite a change relative to the existing vegetarian and soon kosher catering market which is quite stagnant. Most people make the incorrect assumption that vegetarian foods means ordinary, boring food. This assumption prevails throughout the entire communities so there is not much demand for new offerings.

When you’re vegan, do you think you get fewer colds than the average person? Speaking for myself, I have to answer with a resounding “yes.” I’ve been vegan for the last 4 years. In that time, I have never had the flu. I get a cold about every 1 to 2 years, and the duration and severity of the cold are far less than when I wasn’t vegan. The colds I have gotten since being vegan are more of an annoyance than anything…just enough to make me feel a little under the weather. The same holds true for my friends, who has been vegan for the same amount of time.

There has not been a lot of research on whether or not vegans get less sick than the rest of the population. However, it wouldn’t surprise me if this was true. The majority of vegans consume many more fruits, vegetables, nuts, seeds, beans, legumes and soy than non-vegans, and without the addition of meat, dairy or eggs. All of these plant foods contain antioxidants, which help support the immune system.

This is my thought for today.
