Homemade Kebab with Onion Marinade and Ketchup Sauce

Ingredients:

For the Kebab:

1 lb ground beef or chicken

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Skewers (wooden or metal)

For the Onion Marinade:

1/2 cup plain yogurt

1 tbsp olive oil

1 tbsp lemon juice

1 small onion, grated

Salt and pepper to taste

For the Ketchup Sauce:

1/2 cup ketchup

1 tbsp vinegar

1 tsp sugar

1/4 tsp cayenne pepper (optional)

Preparation:

In a bowl, mix yogurt, olive oil, lemon juice, grated onion, salt, and pepper to make the marinade.

Combine ground meat, chopped onion, garlic, cumin, paprika, salt, and pepper. Add half of the marinade to the meat mixture and refrigerate for 30 minutes.

Shape the meat mixture onto skewers and preheat the grill or stovetop pan.

Grill the kebabs over medium heat for 8-10 minutes, turning occasionally, until fully cooked.

For the sauce, mix ketchup, vinegar, sugar, and cayenne pepper in a bowl.

Serve the kebabs with the homemade ketchup sauce. Enjoy

Date Coffee Loaf Cake with Walnuts and Rich Espresso Glaze ☕🍂

Ingredients:

For the Cake:

1 ½ cups dates, pitted and chopped
1 cup hot brewed coffee
1 ¾ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ tsp ground cinnamon
¼ tsp ground nutmeg
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 cup chopped walnuts
For the Espresso Glaze:

1 cup powdered sugar
2 tbsp brewed espresso (strong coffee)
1 tsp vanilla extract
Instructions:

1. Prep the Dates:

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
Combine the chopped dates and hot brewed coffee in a bowl. Let sit for 10-15 minutes to soften the dates.
2. Mix Dry Ingredients:

In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. Cream Butter and Sugar:

In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
4. Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the butter mixture, alternating with the date-coffee mixture. Mix until just combined. Do not overmix.
Gently fold in the chopped walnuts.
5. Bake the Cake:

Pour the batter into the prepared loaf pan and smooth the top.
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
6. Make the Espresso Glaze:

In a small bowl, whisk together the powdered sugar, brewed espresso, and vanilla extract until smooth. Adjust the consistency with a bit more espresso or powdered sugar if needed.

Pineapple Tart
Is the time of the year again for pineapple tarts, a must for Chinese New Year celebrations.
This rich buttery crust with a melt in mouth texture encases a core of sweet pineapple jam. I don’t make many types of cny cookies but this is definitely in my list. What cny snacks are you making this year?

*Pastry crust recipe*
250g unsalted butter
370g All purpose flour
50g icing sugar
20g corn flour
2 egg yolks
*Egg wash*
1 whole egg
1 yolk
A few drops of oil
Method
➡️ Beat butter and sieved icing sugar till smooth. Do not over beat.
➡️ Add the egg yolk and mix well
➡️ Add in the sieved all purpose flour + corn flour
➡️ Use spatula to fold, finishing by hand
➡️ use pineapple tart mould to pipe out the dough and wrap the pineapple jam in the middle
➡️ bake at 180C for 8 mins, remove from oven and egg wash
➡️ Bake for another 10 mins or until it is golden yellow

🌯 Sausage, Egg, and Cheese Breakfast Roll-Ups 🌯

Looking for a breakfast that’s easy, delicious, and totally satisfying? These Sausage, Egg, and Cheese Breakfast Roll-Ups are your perfect morning bite! Packed with savory sausage, scrambled eggs, and melted cheese, all wrapped up in a soft tortilla—this breakfast will have you ready to tackle your day in no time! 😋

Ingredients:

🌟 4 large flour tortillas
🌟 4 breakfast sausage patties (or crumbled sausage)
🌟 4 large eggs
🌟 1/2 cup shredded cheddar cheese (or your favorite cheese)
🌟 1 tbsp butter (for cooking)
🌟 Salt & pepper to taste
🌟 Optional: Salsa or hot sauce for dipping!

Directions:

Cook the Sausage:
Heat a skillet over medium heat and cook the sausage patties until browned and cooked through. Crumble the sausage into smaller pieces if desired. Remove from the skillet and set aside.

Scramble the Eggs:
In the same skillet, melt butter and crack the eggs directly into the pan. Season with a pinch of salt and pepper, then scramble until cooked to your liking.

Assemble the Roll-Ups:
Warm the tortillas in the skillet for about 10 seconds on each side, or microwave for a few seconds to soften. Then, layer the cooked sausage, scrambled eggs, and cheese on each tortilla.

Roll & Serve:
Roll up each tortilla tightly, folding in the sides as you go. Cut them in half for an easy-to-eat breakfast. Serve with salsa or hot sauce for an extra kick if you like!

Peanut Butter Cup Dump Cake
Ingredients
1 box chocolate cake mix
1 (3.9 oz) box instant chocolate pudding mix
2 cups whole milk
1/2 cup creamy peanut butter
1/2 cup butter, melted
1 cup mini peanut butter cups, chopped
1 cup milk chocolate chips
1/2 cup chopped peanuts (optional)
Whipped cream or vanilla ice cream (for serving)
Instructions
Preheat oven to 350°F. Grease a 9x13-inch baking dish.
Whisk pudding mix and milk until smooth; let thicken.
Pour pudding into baking dish.
Sprinkle dry cake mix evenly over pudding.
Drizzle melted butter and peanut butter on top; swirl slightly.
Scatter peanut butter cups, chocolate chips, and peanuts (if using).
Bake for 35-40 minutes until edges set but center is slightly gooey.

Rouleaux de croissant au jambon et au fromage

Croissants délicieusement flocons remplis de fromage crémeux et de jambon salé – parfaits pour le petit-déjeuner, le brunch ou une collation rapide !

Ingrédients :

🥐 Pâte à croissant : 1 paquet de pâte à croissant pré-fait ou pâte maison
🧀 Fromage au cheddar : 1 tasse, déchiquetée
🧀 Fromage Mozzarella : 1/2 tasse, déchiquetée
🍖 Jambon : 1/2 tasse en dés
🥚 Oeuf : 1, battu (pour le lavage des œufs)
🌿 Persil : haché, pour garnir
🧈 Beurre : fondu, pour brossage dessus
Instructions :

Préchauffez le four : Préchauffez votre four à 375°F (190°C).
Préparez la pâte : Déroulez la pâte à croissant sur une surface propre. Séparer la pâte en triangles individuels.
Assemblez les Rolls : Sur chaque triangle de pâte, placez une petite quantité de jambon, suivie d'une généreuse cuillère de cheddar râpé et de fromage mozzarella.
Enrouler les croissants : en partant de l'extrémité large, rouler chaque triangle de pâte en forme de croissant.
Lavage aux œufs : Brossez chaque rouleau de croissant avec un œuf battu pour lui donner une finition dorée et brillante.

A simple, satisfying wrap packed with flavor and nutrients! Perfect for a quick lunch or dinner.

Ingredients:
1 lb ground beef 🍖
1 tbsp olive oil 🧴
4 large flour tortillas 🌯
1 cup shredded mozzarella or cheddar cheese 🧀
1 cup fresh kale, chopped 🌿
1 tomato, diced 🍅
1/2 onion, diced (optional) 🧅
Salt and pepper to taste 🧂
1 tsp garlic powder (optional) 🧄
1 tbsp olive oil for grilling 🧴
Instructions:
Cook the beef: In a large skillet, heat olive oil over medium heat. Add the ground beef, season with salt, pepper, and garlic powder, and cook until browned, breaking it apart with a spoon. Remove from heat and set aside.
Prepare the tortillas: Warm the tortillas in a dry skillet or microwave for 20-30 seconds to soften them.

Flavorful Curry Puffs

Filling:
* 500g potato, peeled and finely diced
* 1 onion, finely chopped
* 100g long beans, chopped
* 1 tbsp minced garlic
* 1 tbsp ginger paste (optional)
* 4 tbsp curry powder mixed with 100ml water
* 1-2 tbsp chili powder
* 300ml water for cooking the potatoes
* 3-4 tbsp oil for cooking

Wrapper:
* 2 cups wheat flour
* 1/4 cup hot cooking oil
* 1/2 cup ice water
* 1/2 tsp salt
* 1 tsp sugar

Instructions:
1. Heat the oil in a pan over medium heat. Sauté the garlic and ginger paste until fragrant. Add the curry powder mixture and cook over low heat for 10 minutes, stirring continuously.

2. Add potatoes, onion, and seasonings. Stir, add water, and cover. Cook until potatoes are tender.

3. Add long beans, cook for 2 more minutes. Taste and adjust seasonings as needed. Cool the filling completely before using. (You can make this filling a day ahead and keep it in the fridge.)

4. In a bowl, combine the flour, sugar, and salt.

5. Heat the cooking oil until hot, then pour it directly into the flour mixture and mix thoroughly.

6. Add the ice-cold water to the mixture and knead to form a non-sticky dough.

7. Cover the dough and let it rest for 30-60 minutes.

8. Divide the dough equally into small balls. (Cover with plastic wrap to avoid dryness.)

9. Take a piece of dough, roll it flat, add filling, fold over, seal, and twist the edges.

10. Deep fry in small batches until golden brown, about 3-4 minutes.
