Every day we sell a ton of crispy rice at Lure, topped with tuna, or uni, or caviar. We didn’t invent it, but we sure love it. The man who did, Katsuya Uechi, passed away this month at 67. He first put spicy tuna on a crisp little cake of rice at his own sushi bar in Studio City, and the dish took off from there onto menus all over the world. Ours included. We owe him a bit of gratitude for that. He left his mark on the culinary world, one plate at a time, and we’re glad to keep serving our version of what he started.
