Co-founder Hector Savaria and partner Bob Ambrose took us behind the scenes of their family-run operation in Sullivan County, NY, where the team raises its own ducks and oversees production in house—right down to the corn and soil that shape the final product. Their Orvia duck breast is air-chilled to concentrate flavor and deliver the crisp skin chefs look for when pan-roasting. It’s the kind of attention to detail that gives chefs a better starting point, and the confidence to let an ingredient lead.

That’s a wrap! Our Baldor team is pleased to be able to support the US Open every year, and this year was bigger and better than ever. We’re especially grateful for the team of hard-working individuals who helped hand-scoop a record 3.4 million melon balls for the event’s signature Honey Deuce cocktail.

This week we thanked the team behind that number at our Bronx facility. We didn’t serve Honey Deuces—no alcohol in the facility—but also, they’ve had their fair share of melons for a while.
