Last Friday. 7 PM. First seating.
Room almost full, appetizers about to hit the tables.Some familiar faces at the bar — the Levine family, Molly with her friend (whose name I can never remember), Chris already cracking jokes with my cousin Salim.We’re down two key players — no Cécile, no Rodrigo. Just one of those nights.And right then… the DOH walks in. Surprise inspection.Full dining room. Eyes on us.
Some guests joking, some definitely wondering… are we good here?Inspector goes everywhere — kitchen, basement, every fridge, every corner. Flashlight out, no detail missed. About an hour in. Then sits down, writes what feels like a novel. The whole room? Quiet. You could feel it.Then he reaches into his bag…
Pulls out that card.A.I ran to the kitchen — showed the team.
Pure explosion. Pride, relief… maybe a couple tears. Came back to the floor, showed the room — people started clapping.
Every table congratulating us. We ended up serving close to 90 guests that night.So yeah… is getting an A like winning an Oscar?
Or just doing what we’re supposed to do?Either way — damn, that one felt good.
