The appetizer features chicken wings gently smoked with cherry blossom wood, paired with spring vegetables such as bamboo shoots and nanohana.

As a palate cleanser, we present one of spring’s true delicacies — fire-roasted hotaru ika (firefly squid) from Toyama, at the peak of its season.
