In Basque, goxua simply means sweet 🧁

It is also the name of a dessert born in Vitoria-Gasteiz — layers of cream, cake, and caramel that the Basque Country has claimed as its own for generations. Ours honors that tradition: apple compote beneath almond cake, quince chantilly for lift, and a wildflower honey custard that pools around everything and lingers long after the last spoonful.

Our Wild Mushroom and Allium Quiche layers hen of the woods and crimini mushrooms with leeks, shallots, and fennel — all nestled in a crème fraîche custard and finished with baby watercress and fresh herbs. Delicate, earthy, and deeply satisfying in the way only a properly made quiche can be.
