Herb Roasted Chicken with Potatoes and Salad
Ingredients:
1 cucumber, sliced
4 chicken thighs or breasts
500 g potatoes, cut into chunks
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
3 cloves garlic, minced
Salt and black pepper, to taste
1 tomato, chopped
Lettuce leaves
Juice of ½ lemon
Instructions:
Preheat the oven to 200°C (400°F).
In a large bowl, mix the chicken with 1 tablespoon olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
Toss the potatoes with the remaining olive oil, a pinch of salt, and pepper.
Arrange the chicken and potatoes on a baking tray and roast for 35–45 minutes, or until the chicken is fully cooked and the potatoes are golden and tender.
Meanwhile, prepare the salad by combining cucumber, tomato, and lettuce in a bowl.
Drizzle the salad with lemon juice, a little olive oil, salt, and pepper. Toss well.
Serve the herb-roasted chicken alongside the roasted potatoes and fresh salad.
