Here’s a guide from chef to making amazingly Smokey salsa. First get yourself a comal (caste iron pan works too) and add tomatoes at highest heat possible.
Then let them “chamuscar” or char (be patient) turn only once... add your Chipotles and/or any other spicy peppers with garlic, onions and salt of course to taste and enjoy! @ West Covina, California

What’s your favorite Sunday brunch dish? Growing up this was one of my most favorite dishes in my family household... Pozole is the perfect combination of indigenous Mexican Chiles, pork stock, pork shoulder( properly butchered) & hominy with the freshness of red radish, Napa cabbage & white onion... chiles used here are: Chile arbol, ancho, guajillo and negro.... this dish makes me so happy and reminds me of where I come from... thanks mom & dad and family for this one❤️. @ New York, New York

We want to thank our community of the and all of our dedicated patrons and regulars who have stopped in to Chamusca to taste our food, have a conversation about & and/or just being amazing and great folks..
