Food trucks run on their own engine and offer full mobility, since the kitchen and the vehicle are one unit. That convenience comes with vehicle maintenance costs on top of the kitchen build itself.

Food trailers require a separate tow vehicle but often cost less to build and give you more interior square footage to work with. They're also easier to store when not in use, since the trailer can be detached from the tow vehicle.
