Most people see the exterior of a food truck. The part that decides whether it works is inside. Four systems carry the load.
• Plumbing handles fresh water, wastewater, and the handwashing and ware-washing sinks inspectors look for.
• Electrical powers refrigeration, lighting, and appliances without overloading the build.
• Gas supplies cooking equipment and must be installed and secured to code.
• Ventilation, the exhaust hood and fans, pulls heat, smoke, and grease out so the space stays safe to work in.
When all four are planned together instead of patched in later, the kitchen runs cleaner and lasts longer. Questions about a build? [email protected] or (718) 599-4583.
