🍯 LOUKOUMADES (Greek Honey Donuts)

Ingredients

For the dough:
• 1 cup warm water
• 2 ¼ tsp dry yeast
• 1 ½ cups flour
• 1 tbsp sugar
• 1 tbsp cornflour
• ¼ tsp salt
• 1 tbsp olive oil

For serving:
• Honey
• Chopped walnuts
• Oil for frying

Method
    1.    In a bowl, mix warm water, yeast, and sugar. Let it sit for 5–10 minutes.
    2.    Add flour, cornflour, salt, and olive oil. Mix until smooth batter forms.
    3.    Cover and let rise for 1 hour until doubled.
    4.    Heat oil in a pot. Drop small spoonfuls of dough into hot oil.
    5.    Fry until golden and crispy.
    6.    Drizzle with honey and sprinkle with walnuts.

🍰 Cinnamon Roll Lasagna 🍰
Ingredients
For the dough:
3 cups self-rising flour
½ cup (1 stick) unsalted butter, softened
1 ¼ cups buttermilk
For the filling:
½ cup (1 stick) unsalted butter, melted
1 cup dark brown sugar, packed
2 tablespoons ground cinnamon
For the glaze:
3 cups powdered sugar
2 teaspoons vanilla extract
1 cup buttermilk
Instructions
Preheat and prepare the baking dish – Set your oven rack to the middle position. Preheat the oven to 375°F. Grease an 8-inch square baking dish generously with butter or non-stick cooking spray. Set the dish aside.

Make the dough – In a large mixing bowl, add the self-rising flour. Cut the softened butter into the flour using a pastry blender or two knives. Work the butter in until the mixture resembles coarse crumbs with no large butter pieces remaining. Pour in the buttermilk and stir with a fork or rubber spatula until a thick, shaggy dough forms. Do not overmix. Let the dough rest in the bowl while you prepare the filling and glaze (about 5 minutes).

Prepare the filling – In a small microwave-safe bowl, melt the ½ cup of butter for the filling (about 30 seconds on high). Whisk in the dark brown sugar and ground cinnamon until the mixture is smooth and well combined. The filling will have a thick, paste-like consistency. Set aside.

Prepare the glaze – In a medium bowl, combine the powdered sugar, vanilla extract, and 1 cup of buttermilk. Whisk vigorously until the glaze is completely smooth and free of lumps. The consistency should be pourable but not watery. Set aside.

Roll and cut the dough – Lightly flour a clean work surface. Turn the dough out onto the surface and roll it into a rough 16-inch by 16-inch square (the shape does not need to be perfect). Using a sharp knife or pizza cutter, slice the dough into 1-inch wide strips. Then cut each strip in half crosswise, so you have pieces approximately 1 inch by 8 inches.

Assemble the first layer – Spread about 2 tablespoons of the cinnamon-sugar filling evenly over the bottom of the prepared baking dish. Arrange enough dough strips in a single layer to completely cover the bottom, placing the strips close together so they are touching. The strips do not need to be perfectly aligned; a slight overlap is fine.

Add the second layer components – Spread approximately ¼ cup of the filling evenly over the dough strips. Then drizzle about ½ cup of the glaze over the filling. The glaze will seep down between the strips.

Add the second layer of dough – Place another layer of dough strips over the glaze, again covering the surface completely with strips touching each other.

Repeat the filling and glaze – Spread another ¼ cup of filling over the second dough layer, followed by another ½ cup of glaze.

Add the third (top) layer of dough – Arrange the remaining dough strips as the top layer, covering the surface completely.

Finish the top layer – Spread the remaining filling (about ¼ cup) over the top dough layer. Drizzle with about ¼ cup of glaze, reserving the remaining glaze (approximately ¼ cup) for serving. Do not use all the glaze now; you will need some for drizzling after baking.

Bake – Place the baking dish in the preheated oven. Bake for 30–35 minutes, or until the top is golden brown and the edges are starting to crisp. The center should be set and not jiggle when you gently shake the dish.

Rest and serve – Remove the dish from the oven and let it rest on a wire rack for at least 10 minutes. This resting time allows the filling to set slightly so the layers hold together when served. Just before serving, drizzle the reserved glaze over the top. Serve warm directly from the dish, pulling apart the strips with a fork or spoon.

Ingredients:
• 1 cup cheese (feta or mozzarella or mix)
• 2 cups all-purpose flour
• 1 egg
• 1/2 cup warm water
• 1 tsp sugar
• 1 tsp yeast
• 1 tbsp oil
• Pinch of salt

Instructions:
1️⃣ Mix water, sugar, and yeast. Let it foam. Add flour, salt, oil. Knead into dough and let rise 1 hour.
2️⃣ Shape into boat, fill with cheese, and bake at 220°C for 12–15 mins.
3️⃣ Crack an egg in the center, return to oven 3–4 mins.
