Ingredients:
For the Cake:
- 2 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 4 ripe bananas, mashed
- 1 cup buttermilk
- 1 cup chopped pecans
For the Caramel Sauce:
- 1 cup granulated sugar
- 6 tbsp unsalted butter, cubed
- ½ cup heavy cream
- 1 tsp vanilla extract
- Pinch of salt
For the Frosting:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ¼ cup caramel sauce (from above)
- 2-3 tbsp heavy cream
- 1 tsp vanilla extract
Directions:
1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
2. Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. Wet Ingredients: In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
4. Combine: Mix in the mashed bananas. Gradually add the dry ingredients alternately with the buttermilk, beginning and ending with the dry ingredients. Fold in the chopped pecans.
5. Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
6. Caramel Sauce: In a medium saucepan over medium heat, cook the granulated sugar, stirring constantly until it melts into a golden-brown syrup. Add the butter and stir until melted. Slowly pour in the heavy cream while stirring, then add vanilla extract and salt. Let it cool.
7. Frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, beating until smooth. Mix in the caramel sauce, heavy cream, and vanilla extract until the frosting is light and fluffy.
8. Assemble: Place one cake layer on a serving plate. Spread a layer of frosting on top. Drizzle a little caramel sauce and sprinkle some chopped pecans. Repeat with the remaining layers. Spread the remaining frosting over the top and sides of the cake.
9. Decorate: Drizzle more caramel sauce over the top of the cake and garnish with extra pecans if desired.
