September means the beginning of apple season here in Vermont, and we're celebrating with one of our favorite snacking cakes. We roast Paula Red apples from Champlain Orchards with organic citrus, stick cinnamon, and just a bit of sugar, and then we cure the roasted apples until the flavors fuse. The cake base is made with Misty Brook wheat from Sandra, and we top the whole thing with a cinnamon-brown-sugar rolled-oat crumble for that extra texture. The days are getting shorter, but this cake makes Fall worth it!

It's crazy to think that everything we've baked we've made with flour milled on our Mockmill 100... that is, until now! Our new Mockmill 200 is an even more efficient tabletop stone mill, and its addition to our production space means we can do more milling than ever. But as much as we love our new mill, that old Mockmill 100 will stay in our hearts forever... and ever! Let's all say a little prayer of thanks to the mill that started Atla's.

These Earth Swirl Co**has will rock your world! Naturally colored with matcha, blueberry, and butterfly pea flower, they're the most adorable way to honor this wonderful planet we call home. We're making them throughout August as a fundraiser for various Earth causes.

First up is Abenaki Garden, a farm project in Quechee that grows the Three Sisters using seeds that have been sown in this region for thousands of years. The coolest part of the project is that they give away the seeds they collect to local farmers and gardeners for free! What an awesome cause for us all to support.

Here for a few weeks only, our Sesame Rye Piggies are the perfect summer take on the beloved Puerquitos. We trade the classic gingerbread flavors for tahini, sesame, and local honey from Northwoods Apiaries. The flour is our house-milled, full-inclusion Danko Rye from Wild Hive Farms, NY.
