The perfect weather for a homemade soup! Here’s the recipe for our Cream of Mushroom Soup! Enjoy!
* Feel free to be creative and use any type of mushrooms that you like! I’ve enclosed photos of many types that are quite beautiful and tasty!
You will need:
1 cup mushrooms (about 1/4 lb)
2 tablespoons chopped onion
2 tbl sp butter or margarine
2 tbl sp all-purpose flour
2 cups vegetable broth
1/2 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
Slice mushrooms through cap and stem: cook with onion in butter for five minutes.Add flour and blend; add stock. Cook and stir till slightly thickened. Cool slightly; add cream and seasonings. Heat through; serve at once. Makes 4 to 6 servings. Enjoy!
