A fun fact about ceviche is that while it is popularly considered a Peruvian dish, its origins can be traced back to the ancient Inca civilizations in South America. They preserved their fish with fruit juices, salt, and chilies. The modern form of ceviche, which uses citrus juice to “cook” raw fish, was heavily influenced by Spanish colonizers who introduced limes to the Americas. Today, ceviche is a beloved dish in many coastal regions of Latin America, with each country adding its own unique twist to the recipe.
