Our fifth course has been updated for spring and you'll find it both a little familiar and a little different. It now features a beautiful lamb chop sourced from Colorado and includes new banchan such as soy-glazed potato, charred cucumber, and a ssam lettuce wrap with soy-pickled ramps, shallot, mustard flower, and chili jam!

Mung bean pancake is called "nokdujeon" in Korean. It's a dish that you see everywhere, from holiday table spreads to street vendors. And you can experience it on Jua's tasting menu as well: it is soft and tender on the inside and delightfully crispy on the outside. Trust us, even if you've had nokdujeon before, ours is special! 😋

Yukhoe is a traditional Korean dish that is similar to tartare. At Jua, we pair yukhoe with mung bean pancake for a study in contrasting and complementing flavors, textures, and temperatures.

Pancakes for dessert? Why not? In Korea, hotteok is a type of Korean pancake that is often stuffed with a sweet filling. Chef Kim draws inspiration from this beloved street food and offers his interpretation to in Jua's seven-course tasting menu.

Yuja is a Korean citrus that takes the spotlight in our sixth course. There's yuja sorbet, coconut foam, citrus marmalade...all topped with a beautiful and delicate yuja opaline.

Chef kim pairs two popular Korean dishes for the second course. Yukhoe is a Korean beef tartare while the jeon is a mung bean pancake. They're great separately, but we encourage you to top off your jeon with some yukhoe too!

Have you wondered what's inside our first course, Truffle Kim? There's charred scallop from Hokkaido, Japan; pickled kohlrabi; kimchi; and avocado. And its all inside the delightfully crispy kimbugak and topped off with black truffles from Perigord, France!
