Two days. Twenty ingredients. Five chiles. One mole we’re proud of.

Rooted in the tradition of Mole Poblano from Puebla, our mole is made slowly, the way it’s meant to be. We toast every chile to just the right point, build the paste by hand, and let the flavors come together with Ibarra chocolate and a deeply flavored house-made broth.
