“My first memory is a memory of food.”
Raised on an agro-tourism farm, Kostantis grew up immersed in growing, foraging, and cooking—experiences that continue to shape his approach in the kitchen today.
After culinary school, he moved to New York City to broaden his horizons, spending the past decade working across a range of restaurants and embracing the city’s dynamic food scene.
His cooking is guided by a focus on exceptional ingredients, thoughtful simplicity, and bold, expressive flavors.
Outside the kitchen, you’ll find him exploring the humanities, practicing freehand knife sharpening, or discovering new corners of NYC’s culinary landscape.
