In 2008, Ayako Otake became New York City’s very first Shochu Sommelier,
setting the stage for a new era of appreciation for Japan’s traditional spirit.
She went on to open the acclaimed restaurant Shochu and Tapas AYA in 2013,
and even after its closure during the pandemic,
she continues to champion shochu through online platforms and her live talk show on FM radio station in Tokyo.
Otake regularly travels across the U.S. and the Caribbean,
sharing the depth and elegance of shochu with the world as one of its leading ambassadors.

At Michelin-Starred Sushi Restaurant【 icca】, Head Chef Kazushige Suzuki offers an edomae style omakase menu featuring the highest quality fish flown directly from Japan, including from Toyosu Market. We are currently seeking a passionate and skilled Sous Chef to support our culinary team. The ideal candidate will have extensive experience in Japanese cuisine, strong skills in fish preparation, and a desire to work closely with our Head Chef to contribute to the restaurant long term.

【Key Responsibilities】
Assist with food preparation and service at the counter
Fillet fish, prep ingredients, and cook
Handle daily kitchen tasks, including plating and presentation
Manage inventory and place orders for ingredients
GuideLead and support kitchen staff
Assist high-demand stations as needed
Collaborate closely with the Head Chef

【Qualifications】
Minimum 5 years of culinary experience
Proficient in handling and filleting fish
Strong team player with a solid work ethic
Detail oriented with a focus on hygiene and food safety
Must have a valid work authorization document (e.g., Green Card, Social Security card, Employment Authorization Document).
Must be able to present valid identification (e.g., Green Card, state-issued driver’s license, government-issued ID)
Long-term commitment preferred

Wednesday to Sunday
Shift: 3:00pm until closing, with a break
Staff meal provided

【Preferred Skills】
Fluent or proficient in English (required)
Japanese language skills are a plus
