🇫🇷 Course Four delivered bold elegance and indulgence.
Guests savored Bison Short Rib Wellington—tender, slow-braised bison wrapped in flaky pastry with a rich duxelle and prosciutto, accompanied by silky pommes purée, heirloom carrots, and finished with a luxurious black truffle red wine jus. A dish that was both hearty and refined, showcasing depth of flavor and masterful technique.
The pairing of Domaine des Granges “La Part des Anges” Val de Loire 2022 (100% Négrette) brought vibrant character to the plate, with dark fruit and spice notes that complemented the richness of the bison beautifully.

Guests enjoyed Duck & Cherries—lightly smoked crispy skin duck breast served with spring onion soubise, rich duck jus, and a bright cherry salad that brought the entire dish to life. Rich, refined, and perfectly balanced, it was a standout course that showcased David Burke and Will Lustberg take on classic French flavors.
The pairing of Defaix Frères Bourgogne Rouge 2020 (100% Pinot Noir) elevated every bite, with elegant red fruit and earthy notes complementing the duck beautifully.
