In the wake of our closure, Understory carries forward the spirit of forest-driven cooking through a series of intimate dinners exploring the ingredients, stories, and ecosystems that inspire us most. This chapter centers on the chanterelle: prized for its golden color, delicate texture, and unmistakable woodland aroma.
Chef Juan Pajarito will showcase the mushroom across five courses, highlighting its versatility through thoughtful, seasonal preparations designed to capture a brief and beautiful moment in the growing season.
