For this week’s Sunday Table, we have a strawberry matcha latte that’s as delicious as it is pretty. Bonus: it’s made with a healthy dose of gut-loving fiber.
Fiber-Filled Strawberry Matcha Latte
Strawberry Syrup (Batch)
• 1 cup fresh strawberries, hulled and chopped
• 1/3 cup granulated sugar
• Juice of 1 small lemon
Combine strawberries and sugar in a saucepan over medium-low heat. Once the strawberries soften, mash with a potato masher to release the juices. Stir in the lemon juice and simmer until slightly thickened. Cool.
Vanilla Bean Whipped Cream (Batch, Yields ~2 Cups)
• 1 cup heavy whipping cream
• 1 tsp vanilla bean paste (or seeds from 1 vanilla bean)
• 2 tbsp maple syrup
Whip to soft peaks.
Per Serving (12 oz glass)
• 2 tbsp strawberry syrup
• 6 oz milk of choice
• Ice to fill
• 6g matcha
• 1 scoop Sakara Fiber Super Powder
• 75g warm water
• Dollop of vanilla bean whipped cream
Whisk the matcha, Fiber Super Powder, and warm water into a smooth concentrate. Add strawberry syrup to the bottom of the glass, fill with ice, pour in the milk, then top with the matcha concentrate. Finish with a dollop of vanilla bean whipped cream.
