Fat turns into luxurious texture on the palate, oil content sky rockets and the fish concentrates its flavors. Harmonious.

House fermented pickles to consume with our nigiri courses sits next to a ruby gem that is our mushroom garum-zuke akami. Guests drool over the bright red color and in seconds it’s gone. Consumed with bright eyes and wide smiles. But the story of this piece takes weeks to produce.

Mushroom garum starts at the source of beautiful Hudson valley mycelium from where chef Ouimette grew up in upstate New York. The mushrooms marry with Koji and salt to sit for a few weeks in a controlled environment and then moves to a dehydrator to finish the batch. What comes of this time and effort is a thick soy like marinade that is umami on the pallet and art for the eyes. This is the perfect zuke for our 2 week aged Kagoshima bluefin. A marriage made in heaven or is it just the beautiful synergy that is anbā.
