When I opened my final basket on Food Network's Chopped 🔪 I knew I was going to win. Not because of some over inflated source of self but because one ingredient stood out above all the rest... 🍎 🍏 apples!

Apples were one of the first items I began creating desserts with at a very young age. More importantly they were one of the first things I remember getting high praise about. My Irish Grandfather always was a huge fan and supporter of my culinary dreams, he also loved ❤️ to eat. Once, after Thanksgiving my Grandfather took the rest of the pie to his car so as to save it for himself LOL. When I worked for the dinner chef told me he literally stood over the kitchen counter and ate an entire apple pie 🥧 while talking to guests after I left.

So when I found myself competing on an Irish themed episode of Chopped and apples were in the final basket, I felt my Grandfather's presence and said thank you 🙏🏽

March is such a nostalgic month for me. In 2010 I started as a kitchen assistant at the Smith household, 2015 we lost my Grandfather, and 2018 Chopped aired on TV. All seemingly unrelated but somehow interwoven together to make me the Chef (and person) I am today.
