Biryani doesn’t rush and neither should the people who make it.

Mohd Ismail 🇮🇳 🇳🇵 🇧🇭 🇦🇪 🇸🇦🇺🇸 invited me into the kitchen for a closer look at how India’s most popular dish is made in one of New York’s only kitchens still doing it the traditional way. We spent hours documenting the “dum” method and time with the chef himself to hear what it means to cook his national dish the way his mother made it.
