Chocolate Crinkle Cookies

Materials:
1. 1¾ cups granulated sugar
2. ½ cup vegetable oil
3. 4 large eggs, room temperature
4. 1 tablespoon pure vanilla extract
5. 1 cup unsweetened Dutch cocoa powder
6. 1 teaspoon espresso powder
7. 2 cups all-purpose flour, spooned and leveled
8. 2 teaspoons baking powder
9. ½ teaspoon table salt
10. 1 cup powdered sugar, sifted (for rolling dough balls in)

Step-by-Step Directions:
1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, combine the granulated sugar and vegetable oil. Mix well until the sugar is well incorporated into the oil.
3. Add the eggs to the mixture one at a time, ensuring to beat well after each addition. Then, mix in the pure vanilla extract.
4. In a separate bowl, sift together the unsweetened Dutch cocoa powder, espresso powder, all-purpose flour, baking powder, and table salt until well combined.
5. Gradually add the dry ingredient mixture to the wet mixture, stirring until fully incorporated and a dough forms. The dough should be thick and slightly sticky.
6. Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate the dough for at least 4 hours or overnight. Chilling the dough helps it firm up to make it easier to handle.
7. Once the dough is chilled, scoop tablespoon-sized portions of dough and roll each into a ball.
8. Generously roll each dough ball in sifted powdered sugar until completely coated.
9. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart to allow for spreading during baking.
10. Bake in the preheated oven for 10-12 minutes. The cookies should have cracked tops and be set around the edges but still soft in the center.
11. Once baked, let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Tips & Variations:
- For a richer chocolate flavor, consider increasing the cocoa powder to 1 ¼ cups.
- To add texture, you can mix in ½ cup of chocolate chips into the dough before chilling.

Best Cut Out Sugar Cookie

Materials:
1 cup salted butter, softened
1 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs, room temperature
2 and 3/4 cups all-purpose flour (371 grams)
3/4 teaspoon baking powder
1/2 teaspoon salt
4 cups powdered sugar, sifted (about 480 grams)
3 to 4 tablespoons milk, room temperature
2 and 1/2 tablespoons light corn syrup
1/2 teaspoon pure vanilla extract
Gel food coloring, optional

Directions:
1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy. This should take about 2-3 minutes.
3. Add the vanilla extract, then introduce the eggs one at a time, beating well after each addition until fully incorporated.
4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms. Let the mixer run until all ingredients are fully integrated.
6. Divide the dough into two equal portions. Flatten each portion into a disk about an inch thick. Wrap each disk in plastic wrap and chill in the refrigerator for at least 1 hour.
7. On a lightly floured surface, roll out one disk of dough to about 1/4 inch thickness. Make sure to keep the surface lightly floured to avoid sticking.
8. Cut the rolled dough into desired shapes using cookie cutters. Place the cut-out cookies onto the prepared baking sheets, making sure to leave about 1 inch of space between each cookie.
9. Bake in the preheated oven for 8-10 minutes, or until the edges are just beginning to turn golden. Keep an eye on them to avoid overbaking.
10. Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Then transfer them to a wire rack to cool completely.
11. While the cookies are cooling, prepare the icing by combining the sifted powdered sugar with the milk, light corn syrup, and vanilla extract in a bowl. Stir until smooth, adjusting the consistency with more milk or sugar if necessary.
12. If you’d like to add color to your icing, mix in gel food coloring to achieve the desired hue. Once the cookies are completely cooled, decorate them with the icing as you like.

Tips & Variations:
- If you want to add a little flavor to your cookies, try incorporating a teaspoon of almond extract along with the vanilla extract in the dough.
- For an extra crunch, you can sprinkle some coarse sugar on top of the cookies before baking. This will give them a nice sparkle and additional texture.
