The customer who says nothing may be telling us the most.

Running Cocoa Cabana Shack has taught us that sales only show completed purchases. Great sales doesn't show the person who found the menu confusing, thought the wait felt too long, or had an experience that was just “fine” and quietly decided not to return.

We’re learning to sort feedback into three groups:
Flak: one person’s preference
Insight: the same comment appearing repeatedly
Silence: the customer who never complains and simply disappears

One comment shouldn’t rewrite the menu. But when different customers at different events point toward the same problem, we need to pay attention.

Hope is not an inventory system.

When we started, it was easy to prepare for the crowd we hoped would show up. The real lesson came after the event, when we counted what sold, what remained usable, and what became waste.

A busy line is exciting. It is not a paycheck.

When my wife and I were new to the food-trailer business, it was easy to look at the POS total after a busy event and feel like we had done well.

Then came the less exciting part: sales tax, ingredients, packaging, card fees, event costs, travel, leftover product, waste, and all the hours before and after service.

One of our biggest beginner mistakes at Cocoa Cabana Shack was making too much. We were more afraid of selling out than we were of bringing home product we could not safely or practically use later. That waste had a cost, even when the sales screen looked good.

I wrote about what a busy event actually needs to cover before an owner can call any of it a paycheck—and why unsold, usable inventory is not the same as waste.
