Congregation Coffee Roasters' (whose name is inspired by the collective noun for a group of alligators) mission is to provide New Orleans and the Gulf Region with quality roasted whole bean specialty coffee. The company's focus leans heavily on crafting consistent blends, as well as single origin offerings, for restaurant wholesale and retail. We believe in making specialty coffee accessible to th

e public with thoughtfully designed flavor profiles which build bridges between historical and present trends in coffee. We emphasize communication and education in our offerings to target our audiences's desires. While most of our coffees fall in the spectrum of medium and light roasts, we are sensitive to the history that dark roast and chicory plays in our market and we do our best nod to traditional palates while at the same time pushing the regions boundries. We are devoted to quality in our work and transparency in our product. We believe in a sustainable business practice, with a desire to grow thoughtfully and respectfully. We support the vibrant communities that make this possible, both locally and globally, with great coffee as our common denominator. It is our goal, as culinary professionals, to provide stellar customer service, education and a consistent product.

it’s TRuEeEeEe 👀 we have a new coffee for YOU! 🫵

This coffee’s journey begins with 60 hours of anaerobic fermentation, is then depulped and transferred to anaerobic steel tanks where the pH is monitored until optimal fermentation conditions are reached. Once reached, a lactic acid bacteria mix made from cooked sugarcane and passionfruit is added. This semi-washed (as known as honey) process results in the perfect balance of weird and familiar that any coffee drinker can get behind!

We have a weird one for y’all!  After the Red and Yellow Caturra cherries are picked at peak ripeness, they undergo a 4 hour pre-fermentation on tarps. They are then transferred to airtight tanks where they undergo 7 hours of anaerobic fermentation with the addition of the bacteria Lactobacillus Plantarum. This process gives the coffee a beautiful balance of fruitiness, creaminess, and lactic acidity.
