During the COVID periods, Legacy Kitchen restaurants will operate in accordance with local guid
ance restrictions (phase dependent), Louisiana's Open Safely, and National Restaurant Association Guidelines. The safety and experience of our guests is a priority as well as that of our employees (including our strategic partners who include third-party vendors). OPHG managed and operated restaurants will undergo a deep clean every night, in addition to major day part business segments such as between lunch and dinner. We will use mist sanitizer (EPA registered) on tables, chairs, and other high contact surfaces as a part of this process. For guests, we will place notices to the following effect: “We request guests to use hand sanitizer upon entering the restaurant (available at various locations) and maintain proper social distancing. We recommend wearing a mask when not seated and to use credit or debit cards as opposed to cash. If you do feel sick, we urge you to not enter the restaurant. Those who prefer can always still order curbside or get delivery at safe distancing.”
We have adapted the following steps of service as part of our training and operating protocol in the “new normal” of COVID:
• During the re-hire phase, all OPHG employees must fill out a COVID health screening questionnaire
• All OPHG employees are required to wear face coverings and undergo checks for fever or respiratory symptoms daily
• Host desks (guest entry) will have sanitizer available as well as plexi-shields (including bar), ensure the exterior waiting areas are not blocked. Actively enforce the capacity and social distancing requirements and manage the customers’ movements
• Social distance planning – eliminating seating within 10 feet of other tables and limited spaced bar service, with reminder decals
• Keep at least 6 feet from other employees and customers.
• Sanitizer stations in POS areas, bar, and other applicable tables
• High contact areas, such as counters, doorknobs, POS systems, are cleaned/sanitized every hour
• Eliminating guest contact points, a priority and utilizing single use items where applicable: digital menus (or single use), straws, condiments, etc. Silverware shall use be cleaned and sanitized and placed in in plastic sleeves
• As always, do not touch the customers
• When clearing guest tables, it is strongly preferred that employees put gloves on to bus tables and immediately throw them out after placing discarded guests’ plates, utensils, etc. in the appropriate ware washing area
• Table and chair turn sanitizing mandatory as always
• Reinvigorated practices to wash your hands often. Handwashing is the most important hand hygiene that can be done to stop the spread of COVID
• Clean and disinfect the restrooms regularly (if part of our facility)
