You may know our restaurants but do you know the people behind it? We have so many talented folks that make our restaurants hum. Ryan Plas aka, The Wine Guy, has been with Here Today Hospitality for over 12 years now! He runs the wine programs at both Coquette and Wild South as well as manages the floor a few nights at each. Ryan is such a big part of our programs at both restaurants. No Menu Tuesdays and our wine program wouldn’t be the same without him.

Q: Where are you from?
A: A little town outside of Cleveland, Ohio called Elyria.

Q: We all know you as the wine guy but is there another field that you have a vast knowledge of?
A: Vintage synthesizers and 90s electronic music.

Q: Favorite place to get a glass of wine in New Orleans?
A: I like being surprised by unassuming bottle shops like Martin’s Wine Cellar. Like, OK Trebbiano - What are you doing here?!?

Q: Who is your favorite Pokemon?
A: Probably Psyduck. I think he handles his stress well and manifests it into a creative attack. You can also teach him a lot of great water type moves.

Q: Jazzfest or Mardi Gras?
A: Mardi Gras! I enjoy a confluence of spectacles rather than just one stage. I like the confetti of it all.

Q: What is your favorite food & wine paring?
A: Strange white blends and boudin. It’s almost like an added condiment.

Q: What is your perfect day in NoLa?
A: Sleeping in and then having a nice breakfast of leftovers from a nice dinner the night before on the porch. Followed by hanging at a friend’s house to play a board game. While watching the Saints game and just chill.

Join us this Monday at Wild Social - a more casual way to drink, dine and hang out at Wild South.

We always love having a more accessible service for our friends, neighbors, fellow hospitality workers and patrons to come and enjoy our little corner space in the LGD.

While we are starting this in the summer, we see this as a core part of our business model moving forward and hope to offer it throughout the year.

and will be launching Mondays this week. Menu changes weekly but expect raw oysters, local curated meats (think Jacob’s andouille, Bourgeois’s turkey cheese), Here Today’s famous chicken sandwich and a small selection of seasonally inspired dishes and beverages - maybe even milkshakes!
