They don’t see the 14-hour days. The deliveries that show up late. The burns on forearms. The invoices. The repairs. The nights when you’re the first one in and the last one to leave.

A restaurant is a beautiful, irrational act of faith. You pour everything you have into a few hours each evening and hope people leave feeling something.

This is Chef Sue’s world.

Long before the first glass of wine is poured and long after the last table leaves, she’s here—tasting, adjusting, fixing, teaching, cooking.

If you ever wonder how Chef Sue navigates New Orleans Jazz & Heritage Festival, it’s all about the food. From fresh oysters to fried plantains, a little taste of the Caribbean, and plenty of Creole spice along the way, Chef Sue sampled a little bit of everything.

Gumbo, hand pies, jerk chicken, greens, dirty rice, po’boys, crab beignets, cracklins, mango sorbet, key lime pie, strawberry shortcake, sweet potatoes — the list goes on. Nobody does festival food quite like Jazz Fest.

Chef Sue’s pro move: dump the key lime pie right on top of the strawberry shortcake. Trust her.
