Friday night kicks off with People’s Choice Wings.

Saturday brings KCBS Masters, People’s Choice Pulled Pork, Mayor’s Choice Appetizer, and Turkey, followed by another KCBS Masters contest plus Dessert and Cocktail on Sunday.

From the trimming table to the smokehouse.

We turned 20lbs of our catering & competition brisket trimmings into homemade sausage using The Sausage Maker Jalapeño Herb seasoning with high-temp pepper jack cheese — and these links are looking GOOD.

Smoky, juicy, packed with flavor, and made with zero waste in mind. Nothing beats putting every part of a great brisket to work.

This might need to become a regular menu item. 🌭🔥

What a crazy hot and wet weekend at the Giant BBQ Battle in DC! 🔥🌦️

We had some highs, some humbling moments, and a couple trips to the stage that made it a weekend to remember.

Hello everyone!!! It’s been a while since we’ve posted and the truth is we were scrambling. Back in February, we decided it was time to move manufacturers for our BBQ sauces, we simply had no choice. This process takes a ton of time and effort. Yesterday, I made the cannonball run down south to pick up 300 gallons of Honey Q and Competition. The taste is absolutely amazing and honestly the product is incredible. Sorry that some of our stores had run out!!! We already have another 300 gallons on order so it shouldn’t happen again. Hope everyone enjoys and we will be working to get all our stores stocked up and ready for summer!

It's 2:30am and we are just getting to our hotel after a LOOOOOOOOOOOOOOOOOOOONG wait to load in and get setup for the . Alarm set for 5:30 to head right back over and fire up the Outlaw BBQ Smokers for the first round of ancillary cooks.

Construction update: Week… honestly, we lost count. 😅

But the results have been worth the wait! Big shout out to Humberto @ H&A homeimprovement LLC for all the work his crew has done making it such an easy process and Shrewsbury Plumbing & Heating for all of our plumbing needs.

The walls are finished, the lights are on, and the space is really starting to come together! The final piece is the patio door arriving at the end of the week, then it’s health inspection time.

We’re getting close, and we can’t wait to fire things up. 🔥
