This isn’t just a steak. It’s the product of obsession, experimentation, and a commitment to creating dishes you simply won’t find anywhere else. First conceived by Chef Jeff as one of four ribeye courses for our inaugural private chef’s tasting dinner, this dish earned a permanent place on our Specials Menu.

What began as an experiment in pushing the limits of dry aging and craftsmanship became one of our favorite creations. From rendering our own dry-aged beef tallow to protecting the beef throughout its month-long aging process, every detail is intentional.
