This sausage has a birthplace. A little town called Huacho, on the way to my dad’s hometown of Sayán — that’s where it was born.

We make it here in New Britain now, same way, same care. Rest it overnight, then it goes into our empanadas the next morning — a breakfast that’s been feeding families for generations.
