A few weeks ago, my mom got an email asking her to cater a wedding for a hundred guests. Three days of events. Hundreds of plates. No room for mistakes.
Most people would panic. But not my mom.
She starts every big order the same way, with her masala mix. No shortcuts. No pre-made bases. She grinds everything fresh, tastes everything twice, and makes every curry to order. Dal makhani, butter paneer, pulao, chapatis, all done the way sheโs been doing it for years.
By the time the wedding weekend arrived, our kitchen looked like a command center.
Friday was the kickoff dinner.
Saturday was haldi, and she made pav bhaji that had the whole house smelling like Mumbai street food.
Sunday was breakfast, snacks, and the final lunch.
We got to the gorgeous venue early to unload everything. Chafing dishes, trays of food, stacks of chapatis still warm. The location was beautiful. And I realized:
This is why people trust our restaurant with their biggest moments.
And seeing a hundred guests line up for something she made that morningโฆ that makes every bit of chaos worth it.
