WOW!!! What a crazy summer! Never has it gone by so quickly for me/us. Starting a new business is hard work, but the good kind of work. All me/us, no one over our shoulder, even so, I put the most pressure on myself. When it comes to food/cooking I am a perfectionist and OCD about it. It has been a roller coaster ride from day 1. Our first weekend was insane with torrential downpours and evacuations, and that continued for the following month. We were really second guessing this endevour, but we stuck with it. We accomplished what we came to accomplish. I have the best spot on the Guadalupe, I have made connections, made a ton of new friends and secured a location for years to come. People absolutely love it!!!! I am a truly blessed man to have a woman behind me the whole way. 100% has my back and is more than willing to jump in and put in work!!! This could not have been possible without the help of our friends and family to watch the kids while we chase our dreams. Mom, Robin (Mom in law), my brothers and sister-Alyssa, David, and Big John, father in law Gerry, my cousin Adriel..all.of my friends that came out to help: George Torres, Ken Preston (you saved my ass and I am forever grateful) Peter Herrera, Vito Ochoa, Sarah Hodge...the list goes on...you guys were there for a brutha and I can't thank you enough. Sorry if I left someone out...you know I love ya!!
There is absolutely no way this could have happened without Nikki. She keeps me in check and she, along with our kiddos, are my driving force. I tell you what, people are excited we are out there and so are we. Next year will be bigger and better.
We have one last weekend "Labor Day" and then we are done for the season. Cooking competitions to come.
