Shortly after our move here, we realized that, for us, something was missing — our favorite special and unique bar style pizza! Working with a unique set of culinary skills, some old-school recipes, good friends, and great restaurant connections, Bill took his lifelong love for cooking and his desire to share good food with people and got motivated to develop our own version of this specialty bar
pizza. Bill has an uncanny ability to recreate something just by tasting it. Since moving to Texas, Bill has created and shared many of these homemade pizzas with new friends and families. Whenever someone took their first bite, we would hear statements just like the following time and time again:
“This is legit!”
“This pizza is so good!"
“This area needs you to open a place and bring them this pizza so that everyone can enjoy it!”
“When can I get more?”
After a lot of talking and deliberation, we could see that there was a market for something new like this here in South Central Texas. The purpose of Bar Pizza is to have a beer in one hand and a slice in the other — without losing all of your toppings. This is why a Bar Pizza is always 10 inches. Our dough is handmade daily, and the sauce is created using a blend of high-quality tomatoes and a few secret ingredients. The buttery cheese is grated fresh and is never bought pre-shredded. Many of our toppings are scratch made and we get as many ingredients as we can from local sources. One of the things that we loved when we first got here was the abundance of products that are available from places located nearby in Texas. Who are we? For those of you who don't know us, we are Nikki & Bill, a husband & wife team, with a vision to open and operate a small, local pizza pub. We provide our delicious homemade pizzas and other custom created foods to New Braunfels and the surrounding areas. We feature a well-rounded selection of beverages, including locally crafted beer, and many other small-batch products we can get our hands on. We believe in supporting local businesses and groups to keep as much as we can in the local economy. What about the name? When we decided to start this new venture, choosing the name was a no-brainer. We are Nikki & Bill and live in New Braunfels, Texas. Anyone who is familiar with things back in New England knows that we like to use the word “wicked” to make things sound more intense, like "Wicked Awesome!"
We also typically pronounce most of the R’s in words like “ah”, hence the name NB’s Wicked Bah Pizza. We are excited to be here and even more excited that y’all love our style pizza as much as we do! We are incredibly grateful for your support.
