Another reason to shellebrate this week: Chef's Deconstructed Seared Scallop Carbonara

Linguini tossed in a classic carbonara style, topped with U-10 seared scallops and a soy cured egg yolk. Top it with shaved Beecher's Flagsheep cheese (it's sheep milk cheese. See what they did there?) because regular cheese is too weak for this dish.

This week we're flexing our mussels.…(Apologies for the dad joke. I’ll see myself out).
This week's special: Calabrian style mussels steamed in a spicy smokey cream sauce with nduja salami and Calabrian chilis. Served with garlic parmesan frites for soaking up every last delicious drop.
Like any summer romance, this will be brief, yet remembered fondly for a lifetime.

Beecher's dropped off some handmade cheeses and we immediately built some dishes around them.
🧀 Summer Squash Ravioli. Marinated tomato sauce, basil oil, sun dried tomato oil, piled high and finished with Beecher's Flagsheep, a hard sheep cheese with nutty notes and a tart finish.
🧀 Garlic Noir & Just Jack Mac N Cheese. Orecchiette tossed in Beecher's Garlic Noir (sweet and savory cow's milk) and Just Jack (buttery, rich cow's milk).
With these trying times, the world needs more cheese. Come stop in and see us this week.
