Uova al purgatorio- eggs in purgatory. A classic Italian peasant breakfast.

Brown pancetta, add red onion and garlic, crushed red pepper to liking. Sauté. Add crushed tomatoes and chopped basil. Add eggs and mozzarella.

Broil for 5-7 min. Top with fresh basil, pepper flake and EVOO.

Serve with grilled crispy bread. Mangiamo tutti amici!
