I love croissants and enjoy the attention to detail they require. I’ve been using Claire Saffitz recipe and have watched her YouTube video more times than I can count 😂 but here is a quick overview of the steps of making croissants pt.1.
Ingredients:
605g bread flour
66 g sugar
12 g salt
7 g active dry yeast
1 cup water
1/2 c whole milk
57 g butter
Butter block 340 g high fat butter (I used Truley)

I made these with my kids just to see what the hype was all about. They had a blast and I think it’s a fun little treat for them.
I thought I was going to love these honestly, the dot sprinkles are my favorite on donuts but it was just way too much. Obviously not so bad that I didn’t eat it all though.
P.S. Someone got into the last one before I could try it 😂

I love a croissant because they’re so versatile; ham and cheese, pain au chocolat, or just a classic all butter croissant.
I’ve loved the recipe I’ve been using I just have to perfect the technique. I’m so close to having the technique down and then I’ll be able to share with all of you!

Here’s how I prep my cake pans to make sure each cake comes out clean. I’ve tried the parchment rounds and baking spray but prefer this method because I don’t have to buy or cut out parchment rounds or non-stick spray.
Also don’t mind how many times I say “umm” I’m not a big fan of making voice overs 🤣

All jokes aside… custom cakes are a luxury and come with a matching price tag. If my cakes aren’t in your budget right now I get it, life is expensive but as a cottage baker it is impossible to compete with box store prices, even though many expect us to. Between groceries increasing weekly and valuing my time and skills I simply cannot charge the same that Walmart or Publix does.

So if you’re looking for high quality small batch cakes that taste as good as they look, I’m your gal! If you value the asthetic over high quality goods, Publix is your go to!
