That is, preserving the past while using techniques of the future. Our commitment to serving local food goes beyond just sourcing local. Many of our ingredients used in the restaurant are planted grown and harvested by our staff at Glen Leven Farm, where our partnership in land conservation with the Land Trust for Tennessee affords us the opportunity to harvest our own garden. Our menu shifts with the seasons based on what is fresh and best available, paying homage to classic, southern cuisine.
