It is with an immensely heavy heart that we say goodbye.

There are absolutely not enough words to describe the last four years. They have been some of the highest highs and some of the lowest lows, with an uncountable number of lessons throughout.

Thank you so much to and .jett for believing in us and giving us a platform to share our passion with the world.

We’re so incredibly grateful for everyone who’s supported us throughout this journey.

Our last two days of service will be
Saturday, Nov 29th + Sunday, Nov 30th.

The portal calls us inward. A reminder that every step and every moment is an entry point into something deeper.

Huge congratulations to our co-founder .baguette for being chosen for this year’s Twenty, an annual list honoring those shaping the future of coffee through leadership, mentorship, and vision.

If you’ve ever stepped into our space and felt something you couldn’t quite name, that’s Demi’s doing. From stage managing national championships to championing sensory-led hospitality, to architecting every detail of our bar with intention, Demi’s presence has shaped every inch of Now And Then.

This nomination is more than a milestone. It’s a quiet affirmation of a path walked with care, curiosity, and a kind of brilliance that speaks louder than performance ever could. Now And Then is the culmination of Demi’s entire career, a space shaped by feeling.

We’ll be closed for a bit over the next couple weeks, so here’s what to know:

Now And Then will be closed April 19–20 & April 24–27.

The first weekend is for something personal (we’ll be back in service mode soon, promise).

The second is for something we’re really excited about—Coffee Expo in Houston.

Now And Then will be serving at two booths this year with some friends we deeply admire:

A few days ago, we took a trip to Arkansas to spend time with our friends at They welcomed us into their world—inviting us to sit in on their staff hospitality class, touring us through every one of their spaces, and sharing so much of what makes them who they are.

Hospitality is at the heart of what we do, and with plans to train our own team in the near future, this class felt especially meaningful. We’ve always believed that hospitality is a craft—just like sourcing, roasting, and brewing coffee, it requires care, precision, and deep intention. Learning from a team that has built such a thoughtful, guest-centered culture only reinforced that belief. Great hospitality isn’t just about service; it’s about making people feel seen, valued, and welcome in a way that lingers long after they’ve left.

Walking through Onyx’s spaces and seeing how every detail is considered was a powerful reminder of what’s possible when vision and ex*****on align. It gave us space to reflect on our own growth, to take in new ideas, and to refine what hospitality means in the world we’re creating at Now And Then.

Beyond the learning, this trip was a reminder of the kind of community that makes coffee so special. We walked away with an even deep appreciation for exactly that. The generosity, openness, and willingness to share knowledge is something rare, and something we don’t take for granted.

Thank you, , .papi_, , , , Rapha, and the rest of the Onyx team for your time, your kindness, and for reminding us that we’re not just building a coffee bar—we’re building something that connects people, creates memories, and hopefully inspires others the way this trip has inspired us.

Three years ago today, we shared an idea with the world.

Our idea was to reimagine what a coffee shop experience could look like—rethinking every detail, every interaction, to create something entirely new and unexpected.

It began with a simple question: What makes a great experience? At that time, the coffee industry seemed to be moving toward faster, more automated service—focusing on efficiency and speed. But at what cost? If speed is the goal, where does that leave room for connection? Or for sharing the story of the coffee, the drink, and person or people who produced it?

Through there is nothing wrong with the traditional cafe experience and a quick cup of coffee, We saw an opportunity for something else—something slower. It was the opportunity to be present. An opportunity for conversation and connection. An opportunity to thoughtfully craft experiences for those who would walk through our doors.

In June of 2023, when we moved to Nashville, we didn’t know of how it would all unfold but certain that this was the path we wanted to take. After meeting , who would gave us this incredible opportunity and platform to share this idea with the world, here we are, over year later—grateful, humbled, and excited for what’s ahead.

With that, we are thrilled to officially announce Now And Then will be opening our brick-and-mortar location here in East Nashville.

Thank you and .jett for your mentorship, trust and friendship. You have changed our lives forever. Thank you for believing in us even when we had no idea what we were doing but still seeing our vision. You laid the groundwork with that cleared the path for us to carry the torch of putting people first. Lastly to everyone who believed in and supported this idea—our deepest gratitude and from the heart, thank you for helping bring this to life.

As this year comes to a close, the new year brings new directions, changes, and a desire to keep evolving.

We’ve been reimagining what our future could look like and how we could challenge ourselves rethink the guest experience at Now and Then.

With our aim pointed toward pushing forward into the future, Here is the first of the changes coming to Now and Then:

Starting today (December 26th), Now and Then will move its focus exclusively toward coffee. This means we will be saying goodbye to the entirety of our tea offerings.

This decision didn’t come easy but it is in fact a necessary change. It will allow us the room to channel more of our energy into the coffee and also push to further elevate your experience as a guest.

We’ve been working on creating some new offerings and experiences behind the scenes for you all. While we know that some of you may be disappointed, we want to shift the focus to the great opportunities that will ultimately come from this decision. When one door closes, another opens.

Thank you so much for your endless support. More updates in the coming weeks.
