Juicy Lucy Burgers!

Step 1) Mix 3 parts ground beef with 1 part chopped uncooked bacon with an egg.

Step 2) Make 1/4 lb patties and place a couple chunks of Velveeta cheese on half the patties.

Step 3) Place patties with no cheese on top of the patties with cheese. Roll over edges to make a 1/2 lb burger stuffed with cheese.

Step 4) Season burgers with salt and pepper and cook indirectly in a grill.

Step 4) Once burgers reach 120°F, sear each side for 1 minute directly over coals.

Step 5) Place a slice of cheese on top of burger and remove from pit, letting it rest for a few minutes.

Step 6) Crack open a cold one and enjoy your delicious Juicy Lucy Burger!

Pro Tip: Add a chunk of wood to coals prior to cooking to add some smoke flavor to the burgers.

Smoked baby back ribs. You know when they're done when you can see the bone and the top surface cracks a bit when you lift the rack with tongs. At this point, typically around 4 hours, sauce the ribs and let it set for no more than 5-10 minutes.
