Chicken Taco Soup
Ingredients:
1 ½ lb ground chicken
1 -Vidalia onion chopped
3 -cloves minced garlicd
1 -jalapeno chopped
2 -14.5 oz fire roasted tomatoes
1 – 1 oz packet taco seasoning
1 – 4 oz can green chiles
1 quart chicken broth
1 – 15 oz can pinto beans drained and rinsed
1 – 15 oz can black beans drained and rinsed
1 – 15 oz can corn drained
Salt, pepper, and garlic seasoning to taste
Sour cream, Cilantro, grated cheese, and avocado for serving
Directions:
Add butter and olive oil to a pan on medium heat to cook onion down until caramelize, then add garlic and jalapenos and cook for 3-5 minutes. Add ground chicken and cook until done. Then add tomatoes, taco seasoning, chiles, chicken broth, corn, pinto beans, and black beans. Bring to a boil over medium high heat, then reduce the heat to medium low heat and partially cover stirring occasionally for at least 30 minutes. Taste and add seasonings if needed, I add a lot of SPG seasoning to almost everything that I do.
As with most soups or chilis it is better the next day if you can wait to eat it.
When you are ready to eat it you can add sour cream, cheese, avocado, and more jalapenos if desired.
