This week's harvest is coming up big and bold purple Prosperosa Eggplant and quite naturally it evokes Greek Moussaka a flavorful dish combining either lamb, beef or vegetarian. Served with fresh dug Lemon Roasted Potatoes, corn from the farm and a big Greek salad - yum!
