Damask Cafe Garlic Sauce Recipe

Ingredients:
1 cup fresh garlic cloves
1 cup lemon juice
3 cups vegetable oil
Salt to taste

Direction
Add garlic, salt and lemon juice to a food processor on high speed. Pour oil very slowly.

SUMAC CHICKEN
Taste of Muncie Winner.

Ingredients:
- 1 lb boneless, skinless chicken breast
- 2 tablespoons Sumac spice (not available in grocery stores - available with Damask 21 Recipes and Spices gift set)
- 2 tablespoons minced garlic
- 1 tablespoon oregano (or Italian spice)
- 1/2 cup lemon juice
- 1 cup vegetable oil
- 1 tablespoon salt

Preparation:
- Cut chicken into slices or cubes.
- Put Sumac spice, garlic, oregano, lemon juice, and salt in a food processor and mix well (for about 30 seconds).
- When you reach uniformed consistency, add oil and mix well for another minute.
- Pour Sumac sauce over and between the layers of cut chicken and let it marinate for a few hours in a covered container in the fridge (maximin 24 hrs)
- Take chicken out and enjoy it grilled or on kebab stick.
- Bonappétit

The Pasha

Ingredients:
- 1 zucchini
- 4 oz small broccoli florets
- 4 oz small cauliflower florets
- 2 oz red or yellow onion slices
- 1 tomato diced
- 12 oz heavy whipping cream
- 1/2 cup olive oil
- 1 tablespoon minced garlic
- 1 tablespoon curry powder (available at the grocery store or from Damask Spices Basket)
- Salt and black pepper to taste

Preparation:
- Slice zucchini into quarter-inch thick pieces.
- Place oil in a large sauce pan on high heat and sauté garlic and onion slices until gold color.
- Add zucchini, broccoli, cauliflower, diced tomatoes, heavy cream, curry powder and salt and pepper.
- Stir occasionally until boiling.
- Cover pan and let simmer for 7-10 minutes on low heat.
- Plate over rice or couscous
- Enjoy

Tabbouleh Salad

Ingredients:
- I bunch curly parsley
- 2 or 3 diced Roma tomatoes
- 1 oz finely chopped white or yellow onion
- 2 or 3 oz cracked wheat (available at grocery store or you may replace with couscous/quinoa) - soaked in water or lemons juice over night.
- 1 teaspoon dry mint
- Salt to taste
- Pinch of black pepper
- Olive oil
- A few leaves of fresh mint or your favorite lettuce kind (optional)

Preparation:
- Pick parsley leaves off from stems and chop finely
- Place chopped parsley, diced tomatoes, chopped onions, cracked wheat, mint, salt and freshly squeezed lemon in a mixing bowl and mix well.
- Add black pepper and a few drizzles of olive oil
- Plate over leaves of your favorite lettuce kind (romaine, iceberg, green leaf..) and garnish with fresh mint (optional)
- Enjoy.

HERE’S DAMASK’S ROASTED RED PEPPER HUMMUS

Ingredients
- 30 oz chickpeas (dry or soft from a can)
- 6 oz roasted red pepper
- 1/2 cup tahini (available at grocery stores in Vegan/International section)
- 2 oz fresh lemon juice
- 3 or 4 cloves of peeled garlic (about an ounce)
- Salt to taste

Preparation:
- Dry chickpeas: Soak in water for 24 hours
- Soft chickpeas: Rinse soft chickpeas from cans and put them in a medium size pot. Add fresh water (up to about an inch over chickpeas surface)
- Add 2 cloves of garlic
- Bring your pot to a boil on medium heat until water evaporates down to the level of chickpeas
- Drain hot water and let chickpeas sit until they reach room temperature (overnight is okay)
- In a food processor, add drained chickpeas, tahini, lemon juice, garlic, and drained roasted red pepper (save the pepper juice for later)
- Blend well and add pepper juice until you reach uniform texture.
- Plate and add olive oil
- Order up!

Mediterranean Lemonade

Ingredients
- 2 cups warm water
- 10 cups of cold water
- 1 cup fresh lemon juice (not from concentrate)
- 1 cup sugar (or to taste)
- 1 tablespoon orange blossom water (optimal)
- 4oz Torani Pomegranate, Mango or your favorite flavor (optional)

Preparation:
- Mix sugar with hot water until sugar dissolves
- Mix in rest of ingredients until it’s mixed together well.
- Enjoy.

Gambas Con Ajo
Shrimp with Garlic

Ingredients:
- 10 -12 medium size shrimp (deveined/tail off)
- 1 small onion
- 1 medium size tomato
- Fresh cilantro
- 2 oz minced garlic
- 2 tablespoons olive oil or vegetable oil.
- 8 oz heavy cream
- 1 teaspoon paprika
- Salt, black pepper and/or red pepper flakes to taste

Preparation:
- Dice up onion, tomato and cilantro.
- In a sauté pan, heat up oil then add diced onion, minced garlic and tomatoes and let them sizzle a little.
- Add shrimp (okay if frozen), heavy cream, salt and peppers and bring it to boil on medium heat.
- Reduce heat to low, add some chopped cilantro and paprika. Cover the pan and let it simmer for 2-3 minutes.
- Enjoy.

Moroccan Tajine with Butternut Squash

Ingredients:
- 1 small butternut squash
- 1 small onion
- 1 medium size tomato
- 8 oz garbanzo beans
- 4 oz mandarin oranges
- 1 1/2 cup olive oil or vegetable oil.
- 2 oz lemon juice
- Salt, black pepper and/or red pepper flakes to taste
- 1 teaspoon dried mint (or few fresh mint leaves)
- 2 oz minced garlic.

Preparation:
- Preheat oven to 350
- Peel butternut squash and cut into bite size cubes.
- Toss cut squash with 1 cup of oil, salt, pepper and red pepper flacks. Mix well and place on a baking pan in the oven for 7 minutes or until gold in color
- Dice the onion and tomato
- In a large cooking pot, use 1/2 cup of oil to sauté the onion until golden in color then add the diced tomatoes. Stir constantly for 2-3 minutes..
- Add roasted butternut squash, garbanzo bean and mandarin oranges (with their juices). Mix well and bring the mixture to boil.
- Add mint, lemon juice and garlic. Cover cooking pot and leave them to simmer for about 7 minute on low heat.
- Serve over rice or couscous.
- Enjoy.

Taziki Sauce

Ingredients:
- 16 oz sour cream
- 1 cucumber
- 1 oz fresh minced garlic
- 2 oz lemon juice
- 1 teaspoon garlic powder
- Salt to taste

Preparation:
- Wash and peel the cucumber (leave a few strips of the skin). Cut in half longways. Core the seeds out with a spoon and through away (the seeds not the spoon).
- Shred the peeled cucumber in a food processor or a manual grader into small pieces.
- Wring our the juice from the shredded cucumber and place in a mixing bowl.
- Add all ingredients and mix well.
- Enjoy.

Due to popular demand, I am posting this recipe. However, stay tuned for very important ingredient for this recipe.

Avocado Salad.
Ingredients:
- 1 or 2 ripe avocados
- 1 small onion
- 1 medium size tomato or 12 oz cherry tomatoes
- 1 oz minced garlic
- 2 oz kalamata olives
- 2 oz chopped cilantro
- 2 oz Damask salad dressing (recipe to come)
- Olive oil
- Salt and peppers to taste.
- Fresh basil or strawberry (optional)

Preparation:
- Cut avocado into small cubes like in picture.
- Cut tomatoes.
- Dice onion into small pieces.
- Mix all ingredient in a mixing bowl
- Plate and drizzle with olive oil.
- Add a few fresh basil leaves/ sliced strawberry (optional)
- Enjoy.

Damask Spicy Spinach

Ingredients:
- 1 lb spinach (fresh or frozen)
- Medium size yellow or white onion
- 2 oz minced garlic
- 2 oz minced ginger
- 1/2 cup olive oil (or vegetable oil)
- 1 small can garbanzo beans
- 1 tablespoon Curry powder
- 1/2 tablespoon Turmeric powder
- Salt to taste.
- 1 squeezed lemon.
- Chopped cilantro and feta cheese (optional)

Preparation:
- Dice the onion and place with oil in a cooking pan. Sauté until gold in color then add spinach, garbanzo beans, curry powder, turmeric and salt. Mix occasionally for 15 minutes on medium heat
- Add garlic and ginger. Cover and let it simmer for 15 minutes on low heat.
- Turn heat off. Add lemon juice.
- Plate and sprinkle with cilantro and feta on top.
- Enjoy.

For the past year, every Thursday from 7-10pm the @the.walking.birds came and performed live Jazz music at my restaurant, #twocatscafe Every week they added an energized and upbeat atmosphere that made it such a pleasure for the employees and customers to be apart of.

It has been a true honor and privilege to get to know these 5 talented musicians. Every week they came and were considerate, low maintenance, punctual, driven, and truly passionate about music. Their skill and determination is going to take them far in life.

I am very dishearten to be shutting down my businesses and to have to discontinue Jazz Night. These musicians worked hard to make it what it has become; a community wide event where all different demographics of people were welcome, could mingle, and escape from the stresses of every day life.

Since starting #JazzNight, our profits on Thursday nights has increased drastically. Food sales were up 50%, bar sales up 200%, and the servers all wanted to work that night because it was one of the best shifts.

I can not give a higher recommendation for the Walking Birds because I know they will be a great musicians and will bring good fortune to any business!

Damask bowl. It is my favorite meal on Friday.

Damask Bowl (tidicity):
Ingredients:
- 1 pita (or flatbread)
- 12 oz chickpea (from a can or dry)
- 6 oz plain yogurt.
- 2 oz tahini
- 1 teaspoon minced garlic
- 1 freshly squeezed lemon
- Salt to tast
- Optional: 1 1/2 tablespoon butter or vegetable margarine. 1 oz pinenut. 2 oz fresh pomegranate seeds

Preparation:
- Cut the pita into small pieces (about half an inch squares).
- Optional step: roast or deep fry the pita pieces until golden in color to add crunchiness.
- Empty chickpeas in a heating pan (add water if needed) and bring to boil or until chickpeas are soft.
- Mix yogurt, lemon juice, tahini, garlic and salt in a mixing bowl and set aside.
- Place pita pieces (raw or fried) in a serving bowl. Add salt to taste and pour the chickpeas (with their water) on top. Let it sit for a minute then drain the water out of the bowl (try not to mix the pita pieces with the chickpeas)
- Pour yogurt mix on top
- Optional: roast the pinenut and butter and pour it on top. Add the pomegranate seeds
- Enjoy.

We skipped posting our recipe yesterday. Today, we have 2 recipes because you can’t have baklava without syrup.

Baklava
Ingredients:
- 1 (16 ounce) package phyllo dough sheets (available at grocery stores in the freezer/pastry section)
- 1 lb crushed walnut (or cashews) for baking.
- 1 cup sugar
- 2 tablespoon cinnamon powder
- 1 teaspoon nutmeg
- 8 oz melted butter or vegetables margarine.

Preparation:

* Preheat oven to 350 degrees
* Mix walnut, sugar, cinnamon and nutmeg in a bowl.
* Unroll phyllo dough (after thawing then cover with a dampened cloth to keep from drying out).
* Butter the bottoms and sides of a 9x13 inch pan.
* Place a sheet of dough in pan, butter thoroughly. Repeat until you have 5- 7 sheets layered.
* Spread walnut mix evenly on top
* Place another sheet of dough on top of the mix and butter thoroughly. Repeat until you use all sheets (top layer should be about 6 - 8 sheets deep).
* Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan
* Place pan in oven for 30 minutes or until top layer is gold in color.

Syrup

Ingredients:
- 1 cup sugar
- 2 cups water
- 2 cinnamon sticks.
- 1/2 teaspoon cloves
- 3 drops of fresh lemon juice or zesty lemon peel.

Preparation:

* Boil sugar and water until sugar is melted. Add the rest of the ingredients and let simmer on low heat for about 20 minutes.
* Remove baklava from oven and immediately pour hot syrup over it.
* Let cool.
* Enjoy.

21 days til Christmas. We are offering FREE DAILY RECIPES of your favorite dishes from Damask and Two Cats to our fans! Our first receipt:

Dragon Fried Eggplant:
Ingredients:
- 1 eggplant
- 2 medium size diced tomatoes
- 4 oz diced yellow onions
- 2 oz chopped cilantro
- 1 tablespoon fresh minced garlic
- 2 oz Mae Ploy sweet chilly sauce.
- 20 oz vegetable frying oil.
- Salt to taste

Preparation:
- Peel eggplant and cut into bite size pieces.
- Heat frying oil and deep fry eggplant until golden color.
- Remove eggplant from fryer and let oil drain (add salt if needed).
- In a mixing bowl add the fried eggplant, diced tomatoes, onions, cilantro and garlic. Mix ingredients together.
- Plate and drizzle the sweet chili sauce.
- Enjoy it with pita or without

Damask Cafe and Two Cats Cafe will always be my favorite business ventures I got myself into. I treasured every minute of it and I am honored to have met and worked alongside all the wonderful people in order to serve the community here in Muncie. Sadly, it is time for me to move on to something better. As I used to tell my staff, “Use your work here as a stepping stone to something better”. It is time for us to say goodbye.

Two Cats Cafe will close its doors for good on Thursday, December 13th at 5pm. We will be having a farewell get together for the family & friends at Two Cats at 7pm.

Damask Cafe will close its doors for good on Friday, December 14 at 3pm. We will be having a farewell get together for the family & friends at Damask at 6pm.

It has been a joyful experience where I met a lot of wonderful people. Thank you to all of our loyal customers who have shown us nothing but love & support these last three years, they have been PAWsitivly PURRfect #damaskcafe #twocatscafe
